Loads of strawberries were harmed in the making of this intensely fruited sour beer. Layers of strawberry were refermented on this oak fermented mixed culture while resting in stainless until outrageous. Brewers words:
“This beer started its life 7 months ago… we moved some beer fermented in Foeder 3 into a stainless fermenter and added a whole lot of pureed strawberries to referment and condition for 4 weeks. From there we bottled, where it refermented again to carbonate and condition for another two months.

This is a mixed fermentation sour beer; Foeder 3 contains regular ol’ brewers yeast (saccharomyces), lactic acid bacteria (lactobacillus) and another yeast (brettanomyces). The latter two of these are viewed in the industrialized brewing world as spoilage mechanisms, but in the realm of what we do here they bring complex acidity and fermentation driven fruit character.  The Foeder adds a little tannin dryness and some subtle vanilla notes.
